Hi. I don't have a recipe but a really tasty food. My name is Delores and my husband drives truck. He needed a quick food that he could eat while driving that tasted great and was better than candy bars.

I found these yummy meat sticks and thought you might like to know about them. They're called Ostrim and our favorite is Teriyaki. Only 80 calories and they're low fat. I eat them when out with the kids or when I don't have time for lunch.

Chris buys a case and splits it with the guys at work. I found them online at www.protos-inc.com.

 Cherry Cream Pie by: Nusiance
INGREDIENTS
1/2 pint-- heavy whipping cream
1 can--Eagle Brand Condesed Milk
1/3 cup--lemon juice
1 tsp.--vanilla
1/2 tsp.--almond extract
1 can--cherry pie filling

you also need two baked pie shells

Chill bowl and beaters for about one hour then whip cream until it peaks--do not over beat or you will make butter :lol Put this in "fridge in big bowl combine milk, lemon juice, vanilla, and almond extract. Mix until it thickens. Fold in whipped cream. Pour into pie shells and top with cherry pie filling (you can use blueberry also). Chill for about an hour

ORANGE-SUNRISE MUFFINS

4 Tbsp. Butter or margarine, softened
1/4 cup sugar
1 large egg, lightly beaten
1 tsp. grated orange peel
1/2 cup Florida' Natural Premium orange juice
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground ginger
1/2 cup oat bran

In a small bowl, blend butter and sugar. Add egg, grated orange peel, and orange juice; blend thoroughly. In a separate bowl, stir together flour, baking powder, salt, baking soda, ginger, and oat bran. Make a well in center of flour mixture; add liquid ingredients all at once. Stir just to moisten. Spoon into well-greased muffin cups, filling each 2/3 full. Bake in 375(oven for about 20 minutes or until muffins are browned and tops spring back when lightly touched. Makes 12 muffins.

"Cheesecake"

3 8oz. Pkgs. cream cheese
3 eggs
3tsp lemon juice
1 1/2 cup sugar

Soften cream cheese. Beat until smooth.  Add eggs.  Beat until well blended. Add sugar and continue to beat. Last add lemon juice and beat until well blended. Pour into 9 inch graham cracker crust. I only use the pre made ones by Keebler. They seem to work the best. Bake in preheated 350 oven for around 30 to 45 minutes.

Topping
1cup sour cream
3 tsp lemon juice
1/2 cup sugar

Mix this together as soon as you put the cheesecake in the oven. Refrigerate until cheesecake is completely cooked and set out to cool for about 15 minutes. Then top cheesecake and refrigerate. It is best if left refrigerated over night and served the next day.

Dr Stuart's Mulled Winter Fruits

 

This recipe creates a lovely dessert for the holidays as either a lighter alternative to Christmas pudding or as part of a buffet.

6 Dr Stuart's Apple & Ginger tea bags
2 cups boiling water
2 ounces (1/3 cup) raisins or sultanas
4 ounces (1/2 cup) dried apricots
4 ounces (1/2 cup) dried exotic fruits (pineapple, papaya, melon & mango)
6 cloves
2 star anise or 1 cinnamon stick
8 plums, halved and pitted
2 ounces (1/4 cup) granulated (caster) sugar
2 oranges
Crème fraîche or natural Greek-style yogurt
Place tea bags into a heatproof bowl and add water. Add the raisins, apricots and exotic fruits. Stir, then add cloves and star anise. Cover and allow to soak for several hours or overnight to plump fruit.

Remove tea bags. Pour soaked fruits and liquid into large saucepan. Add plums and sugar. Heat and simmer gently until plums are tender, about 10 minutes. Cool slightly and pour into serving bowl.

Using a sharp knife, remove skin from the oranges. Cut into segments, removing membrane. Add orange segments to bowl, stirring gently to mix. Serve while warm, accompanied by crème fraîche or natural Greek-style yogurt.

Variation: Substitute different types of dried fruits, such as dried plums or apple slices.

Makes 4 servings

                            Apple Bran Muffins

   3      teaspoons Baking soda
  3/4   cup Butter
   3      teaspoons  Cinnamon
 1/2     cup  Molasses
   1      teaspoon   Nutmeg
   2      Eggs
   1      teaspoon Salt
   2      cup  Flour
   1      pound Can applesauce
   1 1/2  cups  100% bran cereal

Cream sugar and butter.  Beat in eggs and molasses. Add dry ingredients, then applesauce.  Will look curdled. Use 2 paper liners per muffin and fill 1/2-full.  Last up to 4 weeks.
Cook on medium-high (4 muffins - 2-1/2 minutes; 6 muffins - 3-1/2 
minutes.)

TEMPERING CUSTARD  

Tempering is a technique often used in making custards. To make a sweet custard, eggs are mixed with sugar and then combined with hot milk or cream, and heated just to the boiling point.

To prevent the eggs from curdling or scrambling, first a small amount of hot cream is whisked into the eggs. This raises the temperature of the eggs gradually. This technique is called tempering.

Next, the warmed egg and cream mixture is added into the hot liquid, stirring all the time. The eggs won't curdle at this point, because they have been warmed gently. Keeping the heat low, stir the mixture until the eggs begin to cook, thickening the custard to the point where it can coat the back of a wooden spoon.

TURKEY, GRAVY AND STUFFING WRAP

12-inch tortilla wraps, 1 bag
Cranberry sauce
Sliced turkey
Stuffing
Parsley for garnish

Spread 3 tablespoons of cranberry sauce on a tortilla wrap. Lay 2-3 turkey slices on the wrap. Top with 3-4 tablespoons of stuffing. Roll the wrap. Cut on the bias. Plate wrap and garnish with sprig of parsley.

BUTTERMILK PIE 

This simple recipe makes a great holiday dessert.   

Ingredients: 

2 cups sugar

4 tablespoons flour

½ teaspoon salt

1 stick butter, melted

3 eggs, beaten

1 cup buttermilk

1 teaspoon vanilla 

After you mix all the ingredients together pour into an unbaked piecrust.  Bake at 325 degrees for 1 hour.  Keeps well in a small onboard fridge for a couple of days.

LULU'S TIP OF THE DAY

Here's a cooking tip Lulu learned recently while visiting a friend. The topic was cornbread and since Lulu is famous for her cornbread she popped off and said "let me show you how to make real cornbread." Yeah, famous last words. Well, I am here to tell you all white powdery stuff in a big canister is not flour. Hence Lulu created her famous cornbread recipe baked in a cast iron skillet made with a full cup of powdered sugar instead of flour. Moral of the story, don't brag no matter how successful you have been in the past. ;-)
